Step-by-Step Instructions

Step 1 — Make the Quick Pickles (do this first!)

In two separate small bowls or jars, combine the rice vinegar, warm water, sugar, and salt. Stir until dissolved.

Add the sliced red onions to one jar and the julienned carrots to the other. Press them down so they’re submerged in the brine.

Let them sit at room temperature for at least 20 minutes while you prepare everything else. (They get even better after an hour — or make them the night before!)

Step 2 — Press and Prep the Tofu

Air fry for 15–18 minutes, shaking the basket halfway through, until each piece is deeply golden and crispy on all sides.

Toss the thawed edamame in a pan with 1 teaspoon of sesame oil and a pinch of salt over medium heat for 2–3 minutes, until warm and slightly golden. Set aside.


Step 6 — Make the Dressing

Add all dressing ingredients to a small jar and shake, or whisk together in a bowl. Taste and adjust: more maple syrup for sweetness, more tamari for saltiness, sriracha for heat.
